Phaunus Pet Nat White is produced in Portugal using the ancestral method, a traditional sparkling technique based on a single fermentation. The wine is bottled while fermentation is still in progress, allowing the natural carbon dioxide to be trapped in the bottle and creating its delicate and natural effervescence. The wine is crafted under the direction of enologists Tiago Sampaio and Miguel Viseu.

After pressing, the must undergoes decantation in stainless steel tanks before fermentation begins. Fermentation takes place between 16°C and 18°C in stainless steel, and the wine is then bottled to finish fermentation naturally in the bottle. This process allows the wine to develop its sparkle without the addition of yeasts or sugar.

The wine is disgorged after approximately three months, preserving freshness while refining the mousse. Technical parameters show residual sugar of 4.1 g/L, total acidity of 7.6 g/L (tartaric acid) and a pH of 3.10, reflecting the wine’s natural balance and vibrant structure.

Casal do Paço, in Vasco Croft's family since the 17th century, has the soul of an old Quinta and was the starting point for the Aphros project. The farm spreads over almost 20 hectares of land and woodland, six of which are vineyards and four chestnut orchards. In the centre is a 16th-century granite house with two floors and its chapel. The winery, on the first floor, dates back to the house's origins.
In October 2006, the first biodynamic process was implemented, marking the beginning of something that would transform the estate and its wines.
Now, Casal do Paço is recognised as an ecological winemaking model committed to the preservation of its ecosystems, which includes not only the vineyards, but also entire forests of acacias, oaks, eucalyptus and century-old trees, and is home to wild boar, foxes and eagles.

You're Overpaying for French Wine Because You Don't Know About Portugal

Here's what other wine producing countries don't want you to know:

Portugal makes wines just as good, sometimes better, for half the price. Everyone’s been trained to worship the same names: Bordeaux, Burgundy, Napa, Tuscany. But here’s the uncomfortable truth those wine giants don’t want you to hear:

Portugal is making wines just as exceptional, and often better, for a fraction of the price.

And no, this isn’t a budget alternative. It’s a massive blind spot in the wine world. While the rest of the planet keeps pumping out the same 12 internationally famous grape varieties - Cabernet, Merlot, Syrah, Chardonnay - Portugal has been doing something radically different.

They’ve quietly preserved more than 250 indigenous grapes you can’t find anywhere else on Earth.

Not copies. Not variations. Completely unique varieties with flavours, aromas, and textures you’ve literally never tasted before.

That £80 Cabernet you just splurged on? Portugal has wines made from grapes you’ve never even heard of… and they’ll absolutely stun you, for £20–£30.

Imagine discovering flavours that feel familiar and completely new.

Imagine drinking wine that feels like a secret... because hardly anyone else knows about it yet.
